Vinification

Whole cluster pressing. 20% of the blend was fermented in temperature controlled stainless steel vats between 10/12oC, followed by 4 months of battonage in vats. 80% of the lot fermented in new barrels followed by debattonage for 6 months + 12 months in bottles.
