Vinification
After manual harvesting, with ladders, and transport to the cellar in small boxes (18kg-20kg), the bunches were destemmed from berry to berry, to a small wine press, stepped on foot and then fermented in amphora with indigenous yeasts. This was followed by a light pressing and stage with the total lees in used barrels.
