Winemaking
After manual harvesting and transportation to the winery in small boxes (18kg-20kg), the bunches were destemmed. Fermentation was spontaneous in 225 l barrels of used French oak, without temperature control.
Aging: 10 months in used oak barrels, on fine lees.
Bottle stage: 3 months
Bottling July 2020 (without filtering, without stabilizing)
