Vinification
After manual harvest, and transport to the cellar in small boxes (18kg-20kg), the bunches were destemmed and the grapes were macerated for 8 hours, preceded by a light pressing and 48 hour decantation. It fermented at controlled temperature (14º-15ºC), for 15 days.Stage: 5 months with battonâge.
