Description
The viticultural year of 2019 was characterized as a year of good quantity and higher quality. From vineyards on our property with altitudes from 480 to 500 m, which allowed us to express a unique, aromatic, mineral and fresh character.
Winemaking
The ripening phase took place on a regular basis, which allowed a harvest at the end of August where the grapes presented a good relationship between acidity and sugar.
The grapes were harvested, after a rigorous selection in the vineyard and in the cellar. Having been pressed in a whole bunch and under low pressure in order to maintain the organoleptic characteristics of the grape varieties and a lasting freshness. The must fermented in stainless steel vats using indigenous yeasts in order to maintain the mineral characteristics of our soils, and fermentation was interrupted through natural processes. Finally, it aged for about 10 months in the vat and about 5 months in the bottle.
