Jorge Cardoso and Fernanda Rodrigues were colleagues in Vila Real, where they studied agronomy and became enchanted by viticulture during their tours of the Douro. After a few years, they decided to look for the perfect place for their family wine production project. Jorge, born in Lisbon, and Fernanda, from Douro, had no connection with Alentejo, other than appreciating the region's wines. They saved up and set out in search of land in Alto Alentejo, and it was love at first sight when they found Herdade dos Outeiros Altos.
Vinification
In the cellar, the grapes, after de-stemming and slight crushing, fermented naturally in old clay pots with a capacity of 1,200 l. Daily and until the end of fermentation, the doughs were tamped several times a day. The wine and pasta remained in the tank until December 12th (after St. Martin's Day - November 11th) and was naturally filtered by the “mother's” pasta. The wine rested in a closed tank, without any aging in barrels, thus complying with the tradition and regulatory provisions necessary for its certification as TALHA WINE.
