Vinification and aging
The time chosen for the treatments of the Vine and for the harvest had to be very accurate to achieve the balance of our White and Red wines. An in-depth knowledge of the vineyard, a careful study of climate forecasts and patience were the main factors in deciding when to treat and harvest this year. The winter started out hot, but with a lot of rain, which was an excellent start to replenish water in the soil after a year of drought like 2015. We recorded about 80mm of precipitation above the average of the last 30 years. This initially welcome rain continued in April and May. This constant rain and cool temperatures required extra care for all our vineyards. In the old vineyards, each vine is very close and, with so much rain, the herbs grew more wildly than we had ever seen. This made preventing mildew and powdery mildew a little more difficult. However, the growth of herbs, ironically, acted to prevent the spread of mildew and most of our curls turned out to be very healthy. What happened was that each vine produced fewer clusters than the average, increasing the concentration of flavor and aroma in each berry. June and July were more regular months and August registered unusually hot temperatures, which delayed maturation. Fortunately, the much desired rain came on the 24th and 26th of August. Each day chosen for the harvest was carefully selected, paying particular attention to the acidity levels to maintain balance in such an atypical year. The harvest, decided after analyzing the berries, took place from 14 to 25 September, with the grapes arriving in excellent health. The transport to the cellar was made in 25 kg boxes.
The grapes, at the ideal time of maturation, were harvested manually, destemmed and fermented with prolonged tanning in lagares with treading feet. After fermentation, the wine aged in French oak for 18 months. After bottling in July 2018, the wine aged in bottle for 8 months before leaving for the market. 3,300 bottles were produced.
