To a rhythm only passion can justify, Soito Wines, created in 2013, has already conquered national and international trophies, having been considered one of the iconic producers of the Dão - one more hint that something very serious is about to happen in this fascinating region.
 
Terroir
The vines, planted in the sub-region of Terras de Azurara, enjoy a typically Mediterranean climate, on granitic soils.
The vineyard was generous and balanced, with a density of 3500 to 4000 feet per hectare, it provided 5 tons of grapes per hectare.
 
Viticulture and Winemaking
Vine management: Double cord, single cord and guyot.
Vinification and Aging: The vinification is classic, with the first fermentation in stainless steel vats at a controlled temperature of 16º. The printing was carried out in August 2018. It aged in a cellar at a cool temperature until its degorgement, which was carried out in December 2020.

Crystalline. It shows a soft and captivating straw yellow color with greenish and sparkling reflections.

It presents an exquisite persistence of fine bubbles. reveals good finesse and aromatic delicacy, with the presence of soft floral notes and white-fleshed fruits, in a unique and well-improved cut.

It expresses a unique profile, with a crunchy mineral acidity and well integrated, a delicate, fresh and lively mousse, with a very refined style and refined, with a very persistent finish.
