Vinification
Single vineyard surrounded by trees. Plantation North-South on a hilltop facing South, 60 m above the Sado river valley. Days are hot, nights are cool. The soil’s Ph is around 7.5.
Fermentation in oak vats with a controlled temperature at 12ÂşC. Ageing in stainless steel deposits with a smooth battonage every 2 weeks.
Soil: Light clay with high levels of calcium and silica.
