Winemaking
In schist, soils vineyard aged 80 from Quinta do Cabido, near Numão;
Hand-picked grapes for small boxes;
Partial destemming, followed by crushing and pumping into stainless steel vats;
Fermentation with controlled temperatura, soft pumping over, final maceration of one week;
Malo-lactic fermentation in vat;
20 months aging in French oak Barrels (50% new).
