Winemaking
Beginning of fermentation in stainless steel vats with controlled temperature between 16º and 18º, ending fermentation in used French oak barrels. Twelve month aging in barrel with weekly batonnage.

Harvest
Third week of September, manual harvest in boxes of 15kgs.
