PHILOSOPHY
For us, a great wine is the combination of lavish nature and passion, in a calm atmosphere, without haste or fixed place, in a diverse world and with TIME.
HARVEST YEAR
The Autumn of 2014 was one of the rainiest since there are registers. Since December until March, the year was cold and dry. With the Spring came higher temperatures and some rain which was important for the water replacement. A spotless sprouting occurs in the end of May and Summer came, very hot and very dry. Verraison arrived in July and was nicely homogeneous. One of the specifics of this year was the capacity of the vineyards to maintain the hydration through maturation, which occurred with the right compass. This dry condition of the vineyards reduced illness, which translated into grapes with an impeccable health condition. Harvest was held on 24 September 2015.
VINIFICATION AND AGEING
The grapes were harvested manually, into small boxes of 14kg.
In the cellar, after new qualitative manual selection of the grapes, grapes were destemmed and gently crushed. It was performed a short pre-fermentative maceration. Fermentation took place in stainless-steel vats at controlled temperature of 25oC. During this period pumping overs of variable duration and interval were made.
The malolactic transformation took place in used French oak casks. The finished wine aged in those same used French oak casks, from October 2015 to January 2018. After maturated for two years in stainless stell vats for sensorial enhancement and increment of complexity.
To preserve quality, tictac Merlot 2015 was bottled without treatment and may thus lead to the formation of natural deposit. Bottling took place in December 2019.

Tasting
On the eve of its consumption, put the bottle "standing" and open 1 hour before serving. Consume unhurried, without pressure, with time, at a temperature of 16°C-18°C.
