Fermentation began at a controlled temperature of 14 to 16ºC and when it reached about half of it, a small amount of bentonite was poured to stabilize the proteins and at the same time reduce the content of lees in suspension. At this point, the temperature was lowered to decrease yeast activity and allow the dregs to settle into the vat.
