Winemaking
Manual harvest into 20kg boxes. Pre-fermentative cold maceration with foot treading for 2 days. Fermentation in stainless steel vats with temperature control, long post-fermentation maceration. Pressing in vertical press.
Internship
18 months in new 300L French oak barrels.
