Winemaking
This wine was made from carefully selected grapes from centennial vineyards of Criação Velha, about 420 meters from the sea, exclusively from the Arinto dos Açores grape variety. After destemming, he spent two days in cold maceration with the films and fermented with indigenous yeasts in a French oak vat.

Stage
It aged on the fine lees for 7 months, was bottled in May 2019, followed by the aging in bottle at Gruta das Torres (1,500 years old lava cone) for 15 months at 17 meters deep, constant temperature of 15ºC, humidity of 90 % and total absence of light.
