Grapes from old vines on the Mirandese Plateau, over 600 meters high, with pebbly soils, having several different exposures

Winemaking
Reception with full destemming, followed by skin maceration for 24 hours.
Soft pressing, fermentation in stainless steel vats without temperature control.

Stage
18 months in very old French oak barrels.
