Concept
As the name suggests, it was intended to make a wine where the quality of grapes from a very old vineyard, about 100 years old, was exalted, and the excellence of the terroir of Freixo de Numão - one of the best Douro wines for table wines - thanks to its high altitude.
Castes
In the good way of the old viticulture, the old vineyard where the grapes were harvested, many grapes have been planted, some of which are known to the men of advanced age of the region. Among others, there are the Cornifesto, Bastardo, Casculho, Tourigo, Tinta Raiz ...
Technology
The technology is very simple, respecting the venerable age of the old vineyard. The only modern concession was the stainless steel vats, where it was fermented, and the selected yeasts with which the fermentation was conducted. Until the press where the bagasse was squeezed was moved arm strength.
After fermentation and the first racking, the wine was placed in French oak barrels, where it rested, stabilized and increased for eight months. After that, he retired to a stainless steel vat, where he stayed for about a year, to spend another winter on top of it before the bottling. This occurred in September 2011, after a slight glue and fine filtration. It was not treated by the cold and can therefore form a slight precipitate over time, which in no way detracts from the quality of the wine.
