Winemaking
Manual harvest for 15kg boxes. Total destemming with slight crushing after careful selection of grapes on the mat of choice. Alcoholic fermentation in stainless steel tanks controlled temperatures. After 18 months aging in used French oak barrels, the best barrels were selected to incorporate the batch of this Grande Escolha.
