Winemaking
After manual harvest, and transport to the cellar in small boxes (18kg-20kg), the bunches were destemmed and the grapes were trodden in granite presses where they fermented for about 10 days.
Aging: 6 months barrels (80% used, 20% new)
Soil: schistous origin
